Energy Balls

Anyone who does shift/middle of the night work will know how hard it is to stay on track with healthy

eating! I find that organisation is key. Just made these energy balls to have as on the go snacks, so that I don't reach for junk food when I'm tired or in a rush. Half apricot + grains, half chocolate paleo - both vegan.

Apricot + Grains:

1 cup of rolled oats (I used old fashioned)

1/2 cup of ground flaxseed or LSA

1 cup of coconut

1/2 cup of peanut butter

1/3 cup of pure maple syrup or honey

1/2 cup of dried apricots

1/2 cup of soaked pitted dates

Process all together, then roll in to balls and chill. Will keep for weeks in the fridge or freezer.

Chocolate Paleo Balls:

1 cup of raw almonds

1/2 cup of raw walnuts

1/4 cup pumpkin seeds (pepitas)

1/4 cup of sunflower seeds

2 tbsp cacao or cocoa powder

1 cup of pitted dates, soaked

2 tbsp pure maple syrup or honey

Process together then roll in to balls and chill. Again, these will keep for weeks in the fridge or freezer.

Enjoy!

Ps. You don't have to have the exact right ingredients to make these - If you don't have something, substitute ie. If cacao is too expensive for you, use cocoa. If you don't have apricots but have sultanas - use them! Add in anything you like! If you're unsure about substituting something, message me and I'll help you out! X
