Curried Sweet Potato Soup
Stuck for healthy dinner ideas? In a rush? Trying to lose weight? On a budget? Or all of the above - this recipe is for you! I often get to about 5 o'clock and realise I haven't organised anything for dinner.
When you are busy/tired/working - dinner plans are often the least of your concerns and we end up resorting to quick, unhealthy options like takeout or processed packet meals.
You need 4 ingredients to make this soup, and it take 20 minutes from start to finish. It is perfect if you are watching what you eat, vegan or paleo but still like to have something hearty and flavoursome at dinner time.
Kumara or Sweet Potato is such a great base for a soup - it's low GI and full of goodies that your body will love. The addition on coconut cream makes it a really well balanced meal of carbohydrate, fat and protein.
To make this you will need:
1 large sweet potato (about 400g)
1/2 can of coconut cream
1 1/2 cups of vegetable stock (I make my own but store bought is fine)
1 large tbsp of any curry paste - whichever heat you desire
Salt and Pepper
Peel and chop the sweet potato, then steam or boil until tender. Drain.
In a high speed blender or food processor, blend together all ingredients until smooth and creamy.
Season and serve immediately with toast or roti and extra sour cream.
