Raw Vegan Chocolate Silk Tart

I made this one a little while ago, but just thought it's too good not to feature on here! I took a few slices of this round to a friend's house for them to taste test - not telling them it was raw, vegan and sugar free! They never guessed, and you never will either! This one is perfect for a special occasion (or not!) or to take to/serve at a dinner party.

It is sweetened with medjool dates, but even if you're one of those 'date haters' don't let that put you off - you would never know, trust me!

Base: 2/3 cup of pitted medjool dates (or you could use dried, but soak them in boiling water first) 3 tbsp cacao 1 cup of almonds 1/2 cup of coconut 1/4 cup melted cacao butter (or you could use coconut oil) melted Process until breadcrumb consistency then press in to a cake tin and chill. Filling: The cream from two cans of good quality coconut cream, don't use the water. 1 cup of pitted medjool dates 1/2 cup of cacao butter melted (again you could use coconut oil) 3 tbsp cacao Blend until smooth then pour over chilled base and refrigerate for at least 3 hours.
