I am a big fan of all my meals being well balanced in terms of fats/carbs/protein etc..I am not a high carb low fat or low carb high fat person really, and when you have a vegan or mostly vegan diet, it is sometimes hard to achieve that balance, depending on what you are making, but particularly with smoothies.

I feel most satisfied when my meals include a balance of non-refined carbs i.e. fruit, good fats and a good amount of lean, protein, and smoothies aren't any exception. The addition of peanut butter, along with nut milk is a good way to make this a perfectly, well rounded meal! And the flavours are gorgeous, and reminiscent of childhood sammies!

To make this yourself combine and blend together:

3 bananas

1 1/2 cups of frozen blueberries

2 large tbsp of peanut butter

1 1/2 cups of almond milk

1 tbsp coconut cream

1 tsp pure maple syrup or honey

Serves two, so enjoy with someone else!
