Vanilla Spiced Chia and Açaí Parfait

I have a wedding to attend in one month exactly, and I am part of the bridal part - which means: dress + photos....so at the moment I am of a bit of "wedding shred". I have never been one for calorie counting and I especially don't think it is sustainable longterm, but for the next month I have decided to calorie count.
So my recipes will probably reflect that, and be lower in calories for awhile - join me on the shred if you feel so inclined, and please feel free to share your progress with me on here, FB or IG!
Making lower calorie smoothies is easy. I will be blending a lot with filtered water and cooled teas, both of which are great for the body! It doesn't mean they will be boring, but watching fruit content is impotant. Using spices like vanilla and cinnamon add extra flavour and again are great little extras for your healthy and wellbeing.
For breakfast today I made this 'Vanilla Spiced Chia and Açaí Parfait. It is low calorie, has gorgeous flavours, and is bursting with goodness. Açaí is a perfect way to add low calorie protein to your diet, as it has super high levels but is also an all round superfood, packed with vitamins and all sorts of other goodies! I used Pure Jungle Açaí, which has a glorious flavour, is well priced and lasts foreeeever! Love it! You can get your own lil pouch of superfood here.
This recipe is in two parts.
To make the chia pudding, simply shake together:
1 tbsp of chia seeds
5 tbsp of nutmilk
Vanilla Bean paste to your taste - I used about 1/8th of a tsp
Pour in to the bottom of a large glass and chill for 1 hour.
For the Açaí Smoothie, blend together:
1 cup of frozen berries (I used blueberries and raspberries)
1/2 a banana
1 cup of filtered water
2 tbsp Açaí powder
Pinch of Cinnamon
Pour the smoothie over the chilled chia pudding and serve!
